  • For the Chicken;
    • 1 kg boneless, skinless chicken thighs (trimmed of excess fat)
    • 1 cup buttermilk
    • 1 tablespoon hot sauce (such as Tabasco or Sriracha)
    • 1 teaspoon paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon cayenne pepper (adjust to your spice preference)
    • Salt and freshly ground black pepper to taste
  • For the Coating;
    • 2 cups all-purpose flour
    • 1 tablespoon cornstarch
    • 1 teaspoon paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon cayenne pepper (adjust to your spice preference)
    • 1/2 teaspoon black pepper
    • Vegetable oil for frying
  • For the Aioli;
    • 1/2 cup mayonnaise
    • 1 tablespoon lemon juice
    • 1 clove garlic, minced
    • 1/4 teaspoon dried dill
    • Salt and freshly ground black pepper to taste (optional)

Cooking Guide

  1. Marination: Cut chicken thighs into small to medium sized pieces. Take a large bowl, add buttermilk, garlic powder, hot sauce, paprika, cayenne pepper, onion powder, salt and black pepper. Marinate the chicken in this mixture for at least 1 hour or overnight for deeper flavor.
  2. Caoting Preparation: In a shallow bowl or dish, whisk together the flour, cornstarch, paprika, onion powder, garlic powder, cayenne pepper, and black pepper.
  3. Heat the Oil: Take a Dutch oven or a large pot, and heat enough vegetable oil (about 3-4 inches deep) to 350°F (175°C).
  4. Dredge and Fry: Remove the chicken pieces from the marinade and leave at room temperature for 10 to 15 minutes to drain off excess water. Dip each piece into the flour mixture and coat evenly, gently shaking off excess flour. Dip the chicken pieces in hot oil in small pieces, this will prevent them from sticking to each other. Fry for 4-5 minutes on each side or until golden brown and cooked through.
  5. Make Aioli Sauce: When the chicken is fried, combine the mayonnaise, lemon juice, garlic, and dried dill in a small bowl. Add salt and black pepper to it to taste.
  6. Drain and Serve: Once the chicken thighs are golden brown, use a slotted spoon to remove the chicken pieces from the oil and drain on paper towels to drain excess oil.
  7. Assemble and Enjoy: Serve hot sticks on skewers or plates with aioli sauce to give the best taste.

The return of Hot Rods will be great for KFC food lovers who want to add some heat to their meals. This unique combination of spicy chicken and aioli sauce makes it a perfect snack for anytime.
